Scara means grill in Bulgarian and this is another name for the barbecue on which a variety of meats, vegetables and occasionally fish are cooked. It’s all accompanied by the obligatory fried potatoes garnished with white Bulgarian cheese, and arguably some of the best tripe soup in town. Try it all with local beer, wine or homemade lemonade.
